(Because This winter Is Not Playing Around)
What You’ll Need:
2 whole chicken breasts
3 large carrots
3 celery stalks
2 large red potatoes
1/2 yellow onion
4 cups of pasta
2 cups of stock
8 cups of water
Season With
2 tablespoons of salt
2 tablespoons of black pepper
4 tablespoons of garlic
1 tablespoon of oregano
1 tablespoon of paprika
1 tablespoon of cajun spice or chili powder
As always, you can substitute some of these ingredients with other options, i.e. chicken legs instead of breast.
In a large saucepot, heat a few tablespoons of olive oil over medium heat. While that's heating start slicing your carrots and celery into 1/2 inch pieces. Add them to the pot.
Dice your potatoes and your onion and add to the pot as well. Stir and simmer for about 2 minutes until the onions begin to soften.
Next, cut your chicken breast lengthwise into strips. If you're using bone-in chicken you can add the whole thing to the pot and remove them later. Season the chicken with a pinch of salt and pepper and sear for 1-2 minutes.
Add in the stock, water, pasta, and the rest of the seasoning, and bring everything to a boil. Be sure to stir it well to mix in the seasoning. Once boiling, reduce the heat to medium-low and simmer for 10-12 minutes.
At this point, check to make sure the chicken is cooked through and taste for flavor. Add additional salt and pepper as needed. Cook for an additional 2 -3 minutes before removing it from the heat and allowing it to cool for 1 minute.
Serve it up with some good old saltine crackers and enjoy!
