(It's So Damn Yummy)
1 large chicken breast (sliced or diced)
1 turnip
1 large carrot
1 large red potato
1 large beet
½ Red onion sliced
2 cups of parmesan cheese
½ cup of milk or cream - you can use silk
3 tablespoons of butter or margarine
Parsley for garnish
2 tablespoons of olive oil.
1 teaspoon of Salt
1 tablespoon of Pepper
1 tablespoon of Garlic
1 tablespoon of Cajun Spices (paprika, cayenne, celery salt, black pepper).
Cook time is about 45 mins total.
Preheat your oven to 425 degrees Fahrenheit.
While that’s heating, slice all your veggies about ½ inch thick and add to a mixing bowl, except the onion. Add your sliced or diced chicken breast as well.
Mix in all your seasonings and toss with the olive oil to coat evenly.
Add your chicken and veggie mix to a medium-sized round skillet or baking dish (cast iron is probably best) and place it on the top rack of the oven. Cook for 30 mins.
At the 30 min mark, add the dairy products (cream, cheese, and butter) and onions to the veggie mix and stir to mix. Save some of the cheese for the top.
Cook an additional 15 minutes until the cheese is melted and most of the cream has evaporated.
Top with Parsley for garnish.
