(So F****** Delicious!)
What You’ll Need:
1 whole chicken breast (2lbs)
2 cups of shredded red cabbage
1 cup of shredded carrots
1 cup of thinly sliced scallions/onions
8 flour or corn taco shells
1-2 tablespoons of oil
1/2 half cup of water
Season With
3 tablespoons of salt
3 tablespoons of black pepper
3 tablespoons of garlic
1 tablespoon of cumin
4 tablespoons of Sazon (all-purpose seasoning)
2 tablespoons of dried parsley
2 tablespoons of dried cilantro
2 tablespoons of mayo
1 whole lime
This is by far one of my easiest recipes!
If you haven't shredded your veggies, begin by using a grater to get that sh*t nice and thin. You can also buy them pre-shredded/sliced from any grocery store.
Next, we want to dice our chicken breast into small but meaty pieces.
Once everything is prepped, place the chicken and veggies into separate bowls.
For the veggies, add a tablespoon of salt, pepper, and garlic, and toss in olive oil.
For the chicken, repeat step 5 but add the cumin to that mix as well. Toss until it's evenly coated.
In a large frying pan, heat a tablespoon of oil (you can eyeball how much) over medium heat, and once hot add the cabbage mix. Saute for 3-4 minutes or until it becomes soft. Set aside in a bowl.
In the same pan, toss in the star of the show, the diced chicken. Cook for 5 minutes stirring to make sure each piece cooks evenly, slightly browned on each side.
Pour in the water, add the remaining salt, pepper, garlic, and two tablespoons of the Sazon, mix that sh*t up well and bring to a boil before reducing to a simmer. Cook until the water evaporates and move to a plate or bowl to rest.
At the same time, start heating your shells. You can pop them in the microwave for 20 seconds or place them in the oven on low heat (275 degrees Fahrenheit) for about 10 minutes.
Let's finish our slaw by adding the lime juice, remaining Sazon, parsley & cilantro, and mayo to the bowl and mixing until it's well blending. Season with additional salt and pepper to taste if necessary.
The only thing left is to assemble tacos. The shells are the base (adding cheese is optional), the chicken comes next, and lastly the slaw. That's it. Enjoy!
