Sweet Heat Wings

(Bomb AF!)

4 lbs of wings 

3 large russet potatoes 

4 celery stalks 

2 cups of flour 

2 tablespoons of salt

2 tablespoons of pepper

2 tablespoons of garlic

2 tablespoons of Cajun seasoning 

2 cups of Coconut milk to marinate. 

Da Sauce:

1 cup of sriracha

2 tablespoons of honey 

1 tablespoon of maple syrup 

2 tablespoons of butter 

1 teaspoon of salt 

1 teaspoon of pepper 

1 teaspoon of garlic 

A squeeze of lemon juice

  1. Pull out a large mixing bowl and prepare to get your hands dirty! Add the wings and seasonings and mix generously coating all that shit.  

  2. Pour in the coconut milk making sure it coats all of the wings, then cover and set aside to chill for at least 30 mins. 

  3. Next, wash and dry your potatoes and using your chef’s knife, slice them lengthwise into strips. They should be about half an inch thick.

  4. In a large sauce-pot heat 4 cups of cooking oil (you can eyeball that shit) over medium-high heat. If you have a cooking thermometer use it to check the temp. When its 375 degrees Fahrenheit its ready, otherwise check for heat rising off the oil.

  5. Now the easy part. Take all your sauce ingredients and add them to a small saucepan and heat until boiling. Once boiling reduce the heat to low and let simmer for a few minutes until all the ingredients blend and it thickens. Set aside to cool. 

  6. By this time the wings should be ready. Pour out the coconut milk and add the flour. Shake that shit up until the wings are evenly coated. 

  7. One by one add the wings to the heated oil and cook for about 10 minutes or until they are golden brown. 

  8. Set the cooked wings aside to drain any extra oil before adding to a mixing bowl to toss in the sauce. 

  9. Using a paper towel dry your potatoes/fries before adding them to the oil. Cook for 4-5 minutes before setting aside to cool. 

  10. Lastly but most importantly, sprinkle salt and pepper over all that shit (the oil burns off most seasonings while cooking). 

  11. Plate and serve and boom. You got Sweet Heat Wings.
